Basic Steps
Place eggs in a pot and cover with cold water by about 1 inch. Put the pot on high heat and bring the water to a rolling boil. Once boiling, remove the pot from heat, cover it with a lid, and let the eggs sit in the hot water. The time you leave them in depends on how cooked you want the yolk to be.
Cooking Times for Different Results
For soft boiled eggs with runny yolks, let them sit for 4 to 6 minutes. For medium boiled eggs with slightly soft yolks, aim for 8 to 10 minutes. For hard boiled eggs with fully cooked yolks, leave them for 12 to 14 minutes. These times work for large eggs and may vary slightly for extra-large or small eggs.
Cooling Process
After the time is up, immediately transfer the eggs to a bowl filled with ice water or run them under cold water. This stops the cooking process so the egg does not continue to cook and develop that gray-green ring around the yolk. Let them cool for at least 5 minutes before peeling.
Peeling Tips
Eggs that are 1 to 2 weeks old peel much easier than very fresh eggs. Gently crack the shell all over, then roll the egg under your palm to loosen the shell. Start peeling from the wider end where the air pocket is located, and peel under cool running water for easier removal.
Common Mistakes to Avoid
Do not skip the ice bath, as it prevents overcooked yolks. Do not use boiling water from the start, as this can cause eggs to crack. Make sure your pot is large enough that eggs are covered completely by water so they cook evenly.
